Thai Pork Salad

?         15 oz pulled pork

?         1 red bell pepper, seeded and chopped

?         ½cup chopped fresh cilantro

?         3 cups romaine lettuce

?         3 Tbsp tomato paste

?         3 Tbsp soy sauce

?         1½Tbsp smooth peanut butter, sugar free

?         1 lime

?         1½Tbsp rice wine vinegar

?         1½tsp red curry paste

?         1½tsp five spice

?         1/3 tsp red pepper flakes

?         1½tsp fish sauce

?         Liquid stevia


  • Juice and zest the lime, then place in a bowl.
  • Add the tomato paste, soy sauce, peanut butter, five spice, red curry paste, rice wine vinegar, red pepper flakes, fish sauce, and a few drops of liquid stevia. Mix well.
  • Shred the pulled pork and place on a platter. Toss together the lettuce, red bell pepper, and cilantro, then add the pulled pork on top.
  • Drizzle the sauce over everything, then serve right away.
