?         1 1/2 cups shredded purple cabbage

?         1 1/2 Tbsp rice vinegar

?         1 tsp minced ginger

?         1/2 Tbsp minced garlic

?         3/4 Tbsp fish sauce

?         1 tsp red pepper flakes

?         1/3 small daikon radish, julienned

?         2 small scallions, chopped

?         1 small red chili, sliced thinly

?         1/2 Tbsp red curry paste

?         3/4 Tbsp coconut aminos

?         3/4 lb pork tenderloin, sliced into medallions

?         1 1/2 Tbsp coconut oil

?         2 oz shiitake mushrooms

?         1 Tbsp white wine

?         1/2 Tbsp sesame oil

?         Sea salt

?         Freshly ground black pepper



  • Toss together the cabbage, garlic, ginger, radish, half of the chopped scallion, and chili. Add the rice vinegar, fish sauce, red pepper flakes, red curry paste, and coconut aminos. Mix well, then set aside.
  • Heat coconut oil in a skillet over medium flame and cook the pork medallions until browned. Transfer to a plate and set aside.
  • Add the sesame oil, followed by the shiitake mushrooms and the remaining scallions and stir fry. Pour the wine into the skillet and scrape the bottom to loosen the browned bits.
  • Add the cabbage mixture into the skillet and stir to combine. Stir fry for 3 minutes, then let simmer for 2 minutes.
  • Place the pork medallions back into the skillet and stir fry for 5 minutes or until heated through. Transfer to a platter and serve.
