Rhubarb and Strawberry Smoothie

Ingredients:

?         1 medium rhubarb stalk

?         4 strawberries

?         1 cup ice cubes

?         ½Tbsp almond butter

?         1 Tbsp coconut or heavy cream

?         ½tsp freshly grated ginger

?         ¼tsp pure vanilla extract

?         Liquid stevia

 

Instructions:

  • Pour the cream, ginger, vanilla extract, almond butter, strawberries, and rhubarb stalk into a high power blender. Add the ice cubes.
  • Cover and blend on high until smooth. Add a few drops of liquid stevia to taste. Blend until combined.
  • Pour into a tumbler and enjoy!
