Prosciutto and Spinach Salad

?         6 oz prosciutto

?         4 cups baby spinach, rinsed and drained thoroughly

?         1 avocado, pitted, peeled and diced

?         ½Tbsp freshly squeezed lemon juice

?         ¼cup chopped unsalted cashews

?         ¼cup diced red onion


For the Dressing:

?         2 Tbsp avocado oil

?         2 tsp white wine vinegar

?         ½Tbsp water

?         Onion powder

?         Garlic salt

?         Dried oregano

?         Dried parsley

?         Dried basil

?         Freshly ground black pepper



  • Combine the avocado oil, vinegar, and water in a bowl and mix well. Season with a pinch each of the onion powder, garlic salt, dried herbs, and black pepper. Set aside.
  • Place the diced avocado in a bowl and add the lemon juice on top. Toss lightly to coat. Set aside.
  • Arrange the spinach in a salad bowl, then arrange the prosciutto on top. Place the red onion and avocado on top, then sprinkle with chopped cashews.
  • Drizzle the dressing on top, then toss gently. Serve right away.
