Onion and Garlic Bacon with Kale

?         12 bacon strips

?         12 garlic cloves, mashed and minced

?         2 cups thinly sliced white onion

?         4 Tbsp coconut oil

?         4 cups chopped kale leaves



  • Place a skillet over medium flame and heat the coconut oil. Cook the bacon until crisp. Drain on paper towels and set aside.
  • Remove some of the grease from the pan, then sauté the sliced onion until translucent. Add the garlic and sauté until fragrant.
  • Stir in the chopped kale and mix well. Sauté until wilted. Remove from heat and set aside.
  • Chop the bacon and toss it together with the kale. Serve at once.
