Mashed Cauliflower Pesto

?         1 large cauliflower, washed and chopped into florets

?         3/4 cup pesto of choice

?         1/3 cup bone or vegetable broth

?         5 1/2 Tbsp butter or coconut oil

?         Sea salt



  • Steam the cauliflower florets for 15 minutes, and then transfer to a food processor.
  • Add the broth and season with sea salt. Process until you get a?mashed potato?consistency. Transfer to a bowl.
  • Fold the pesto into the cauliflower mash until evenly combined. Serve at once.
