? 2 cups cherry tomatoes, rinsed thoroughly
? 1 cup fresh basil, rinsed thoroughly
? 4 garlic cloves, peeled
? 2 shallots, peeled
? 1/2 cup tomato paste, unsweetened
? 1/2 cup extra virgin olive oil
? 1/2 tsp sea salt
? Freshly ground black pepper
- Combine the tomatoes, basil, garlic, and shallots in the food processor. Process until chunky.
- Add the tomato paste and pulse as you drizzle in the olive oil. Process until pureed.
- Season to taste with salt and pepper, then process to combine. Transfer to a tightly lidded container and refrigerate for up to 5 days.
