? 24 medium sized sardines, cleaned, scales, gills and innards removed
? 1 1/2 tsp sea salt
? 12 Tbsp extra virgin olive oil
? 6 Tbsp chopped fresh basil, or 6 tsp dried
? 6 Tbsp chopped fresh mint
? Freshly ground black pepper
- Preheat the oven to 350 degrees F.
- Rinse the sardines under cold running water, then season with salt and pepper.
- Arrange on the oven rack and bake for 10 minutes. Transfer to a platter and top with chopped mint and basil.
- Drizzle the olive oil on top, then serve at once.
