Good Morning Chili

Makes: 6 servings

Ingredients:

?         1 lb ground beef, grass fed

?         1/2 lb spicy Italian sausage or ground liver

?         2 cups tomato sauce, preferably from a glass jar and organic

?         1/4 yellow onion, minced

?         2 stalks celery, chopped

?         1/2 bell pepper, seeded and minced

?         1 green chili pepper, seeded and minced

?         1 bacon slice

?         1/2 cup beef broth, homemade or organic

?         1/8 cup chili powder

?         1/2 Tbsp minced garlic

?         1 1/2 Tbsp fresh oregano

?         1 tsp ground cumin

?         1 1/2 Tbsp fresh basil

?         1/2 tsp cayenne pepper

?         1/2 tsp paprika

?         1/2 tsp sea salt

?         1/2 tsp ground black pepper

?         3 sunny side up or scrambled eggs

?         1 avocado, sliced into chunks

?         2 slices bacon, cooked and crumbled

 

Instructions:

  • The night before, place a soup pot over medium high flame and Sauté the ground beef, bacon, and sausage or liver until browned. Drain as much oil as possible from the pot.
  • Stir in the tomato sauce, celery, onion, bell pepper, chili pepper, and broth. Add the cumin, cayenne, paprika, salt, pepper, and basil. Stir very well.
  • Cover, set heat to low flame and let simmer for 1 hour, stirring occasionally.
  • Adjust flavor, if needed, then remove from heat and set aside to cool. Refrigerate, then reheat the following morning and top with fried egg, avocado chunks, and crumbled bacon.
