Easy Prawn and Smoked Salmon Salad

?         7 oz smoked wild salmon, sliced into thin strips

?         14 oz king prawns, boiled or roasted, hard parts removed

?         4 cups halved cherry tomatoes

?         6 cups romaine lettuce, rinsed and drained

?         4 tsp Dijon mustard

?         4 Tbsp extra virgin olive oil

?         4 tsp white or red wine vinegar

?         4 Tbsp fresh dill

?         Freshly ground black pepper



  • Arrange the lettuce in a salad bowl.
  • Toss together the salmon strips, cooked prawns, halved cherry tomatoes, and dill, then pile on top of the lettuce. Season with black pepper.
  • In a bowl, whisk together the olive oil, vinegar, and Dijon mustard. Drizzle over the salad and toss to coat. Serve at once.
