Cream Cheese Pancakes

?         4 oz cream cheese

?         4 eggs

?         1 tsp cinnamon

?         2 Tbsp coconut flour

?         1 1/2 packets Stevia in the raw

?         Coconut oil or butter



  • In a bowl, whisk the eggs, cream cheese, cinnamon, coconut flour, and stevia until just combined. Do not over mix.
  • Place nonstick skillet over medium high flame and heat the coconut oil or butter until melted.
  • Add a ladleful of batter into the skillet and cook for 1 minute, or until bubbly. Flip over and cook the other side for 30 seconds or until firm. Remove from the skillet and repeat with the remaining batter.
  • Serve pancakes with butter on top.
