Coconut Cream and Blueberry Delight

? 1/2 cup fresh or frozen blueberries
? 1/3 cup coconut oil
? 1/4 cup butter
? 2 oz cream cheese, softened
? 2 Tbsp coconut cream
- Arrange the blueberries in a small saucepan, creating a single layer. Place over low flame, then add the butter and coconut oil. Cook until butter and coconut oil are melted, then swirl everything to mix.
- Remove the pan from the flame and set aside to cool for about 8 minutes.
- Once cool, stir in the cream cheese and coconut cream. Mix well, then gradually add the Splenda. Sweeten to taste.
- Transfer the mixture into a dish, then cover and freeze for at least 1 hour. Slice and serve at once.
