Cheese Cheddar Pancakes

?         2 Tbsp olive oil

?         2 large egg whites

?         ¼cup water

?         1 cup almond meal

?         2 oz grated Cheddar cheese

?         1 garlic clove, minced

?         ½Tbsp scallions, minced

?         ½tsp baking powder



  • Beat the egg whites in a bowl until stiff. Fold in the almond meal, cheese, garlic, scallions, baking powder, and olive oil. Mix well.
  • Add the water and mix everything until you have a runny batter.
  • Place a non-stick skillet over high flame and heat through.
  • Once hot, reduce to medium low flame and ladle some of the batter into it. Cook for 1 minute or until bubbly and firm. Flip over and cook until firm.
  • Cook the remaining batter, then serve right away.
