Cauliflower Waffles

         2 cups cauliflower florets

         1 cup mozzarella cheese

         1/2 cup cheddar cheese

         6 eggs

         1/4 cup chopped chives

         1 tsp garlic powder

         1 tsp onion powder

         1/2 tsp red pepper flakes

         Sea salt

         Freshly ground black pepper



  • Shred the cauliflower florets in the food processor, then add the mozzarella and cheddar cheeses and shred everything together.
  • Add the eggs, garlic and onion powder, red pepper flakes, and chopped chives. Process until thoroughly combined. Add a bit of water, if needed.
  • Spoon some of the mixture into a waffle maker. Cook based on manufacturer’s instructions, then remove from the waffle maker and stack on a plate. Repeat with the remaining batch.
  • Serve the waffles with sour cream or any other desired topping.
