Ingredients:

         1/4 cup finely ground Brazil nuts

         1 1/2 Tbsp coconut oil

         4 egg whites

         1 tsp erythritol

         1/2 tsp cinnamon

         1/4 tsp vanilla extract

Instructions:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine the ground nuts, coconut oil, egg whites, erythritol, cinnamon, and vanilla extract in a bowl. Mix thoroughly.
  • Divide the mixture into 9 equal pieces, rolling them into balls and arranging them on the prepared baking sheet. Press down on each cookie with a fork.
  • Bake for 15 minutes, then set on a wire rack to cool before serving.
