Brazil Nut Cookies

? 1/4 cup finely ground Brazil nuts
? 1 1/2 Tbsp coconut oil
? 4 egg whites
? 1 tsp erythritol
? 1/2 tsp cinnamon
? 1/4 tsp vanilla extract
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the ground nuts, coconut oil, egg whites, erythritol, cinnamon, and vanilla extract in a bowl. Mix thoroughly.
- Divide the mixture into 9 equal pieces, rolling them into balls and arranging them on the prepared baking sheet. Press down on each cookie with a fork.
