Bacon Squash Pancakes

Makes: 4 servings

Ingredients:

         8 slices thick cut bacon, cooked until crisp

         4 eggs

         2 1/2 cups cooked spaghetti squash

         2 tsp sea salt

         2 tsp black pepper

         2 tsp garlic powder

         2 tsp onion powder

         1/4 cup Parmesan cheese

         Coconut oil or bacon fat

 

Instructions:

  • In a bowl, combine the eggs, squash, cheese, salt, pepper, and onion and garlic pepper. Crumble the bacon and stir into the mixture.
  • Place a skillet over medium high flame and heat the fat.
  • Spoon 4 tablespoons of the mixture onto the skillet and flatten with a spatula. Brown on both sides. Serve warm, preferably with keto ketchup or sour cream.
